Tsuchi-ebi literally means muddy-shrimp. The name derives from the muddy deep seabed where this type of shrimp is caught in nets from along with snow crabs. There are various types of shrimp that can be caught by Maizuru, such as kuruma shrimp and sweet shrimp, but tsuchi-ebi (lit. muddy shrimp) are only locally available because the catch is small, and the head part turns black soon after landing. It looks brown and does not look appetizing, but its delicate taste that is said to be sweeter than sweet shrimp when eaten as sashimi.
